First, it’s the hardest cheese I’ve ever encountered. Compared to this, a five year old aged Edam is cream cheese. It looks like pieces of glazed pottery, and in the mouth, feels much the same. It’s impossible to chew right out of the package, and twenty minutes of sucking on it will slightly soften the surface to the point that you can almost taste it. I’m still not sure if I like it, or what it even tastes like, but I’ve got a whole package to go through to get a better idea. After all, over 3 million Tibetans like it, and they make some pretty tasty food.

I ordered these largely out of curiosity. I’ve eaten in a couple of Tibetan restaurants in the area, but I’d never seen or heard of chhurpi before encountering across these here. Wikipedia has an interesting and useful article on the varieties, production, and uses of chhurpi, but nothing replaces first-hand experience. So what’s it like?
