I keep some in a tightly sealed small jar to use daily and it's fine but if you live in a hot or humid area better to refrigerate **Q: Once opened, how long does this last?** A: If you mean without going bad? The flavor carried on my tongue and made the green chilis in the beef,ham, and pinto beans taste even better. They brought the flavor out. I can stand a LOT of heat if there's flavor. I've watched enough Bobby Flay using them, I've been dying to try them. The seal was fine, the texture was fine, but I love the quality and this was a great deal compared to others, The simplicity of the recipe they use was also what attracted me to these. I'm now addicted. Even my wife who doesn't like too much spice/heat said they're great.
