I've never been interested in trying to eat these as they are - to me, they're like trying to eat a slightly sweet, dried chickpea, and about as appetising - but as a dairy free, nut free 'milk' I like these.The 'milk' is easy to make by soaking a mugful of these little tubers overnight in cold water, straining them and then blitzing the soaked nuts in a blender with a litre of cold water, a pinch of salt and a teaspoonful of sugar. Squeeze out through a nut milk bag in exactly the same way as any nut milk, decant into a fridge jug and refrigerate.The milk tastes light, refreshing and not unlike semi skimmed dairy milk from cows fed on sweet grasses and not on concentrates.The leftover pulp can be slowly dried in the oven, and used in veggie dishes, stuffings, as an alternative to breadcrumbs, or a tablespoonful added to smoothies, soups or curries to thicken. The dried pulp crumbs last for ages in an airtight jar.If I end up with pulp I'm not going to be using anytime soon, either from nut milks or Tiger milk, it makes a great feast for garden birds if mixed up with a few raisins, leftover cake, etc and soaked in melted lard and left to set. I'll stick to eating them! According to the Daily Mail (if you believe everything you read there) they are tubers of a plant called the yellow nutsedge and are high in iron, potassium, magnesium and Vitamins C and E I'm going to be bursting with health! Quality appears to be good. Arrived within 48 hours and well enough packed. Cheaper elsewhere, but with Prime ...! One warning. If you eat too many and they are not sufficiently moist, you may well finish up with a severe case of constipation. They do dry out quite quickly, but it appears you can soak them in water to restore their sweet soft nuttiness. Very fresh nuts and a sweet tasting. Tiger nuts were promoted on a channel 4 good show this week and have scientific evidence of being good for the intestines to combat bad bacteria.
