I imagine most people would be quite happy just using this stone, it gives a good, sharp finish with the 3000 grit - the 1000 is probably best used for really blunt knives to get an edge back. There are plenty of videos available to help you use these stones, but do soak the stone for at least 5 minutes before use, keep it wet, and use steady back and forth strokes keeping the blade at around 15-20 degrees.
