Suggest using home made stock instead of water (made with a veggie stock cube, simmered with bruised ginger, garlic, lemongrass and chilli until flavourful), a full can of coconut milk and garnishing with blanched bean sprouts, mangetout, red pepper strips, fried onion, cooked prawns and chopped coriander leaves/spring onions.
