I make 4 gallon batches of "farmhouse cheddar" roughly every 2 - 4 weeks and this will last more than one year (1/2 teaspoon per batch). This is a much better value than many other options where you get a much smaller amount. Reseal and store in the freezer. I also use this to make mozzarella.

This culture works well. I make 4 gallon batches of "farmhouse cheddar" roughly every 2 - 4 weeks and this will last more than one year (1/2 teaspoon per batch).
