Product Description Make your own delicious kefir at home! Nourish Kefir Starter Cultures are quick and easy to make your own delicious, fresh kefir at home using your choice of fresh milk, including cow’s milk, lacto-free milk, goat’s milk and soya milk. These starter cultures are reliable and make great tasting and effective kefir without the effort of having to look after live kefir grains. Why? Because each sachet has a measured amount of kefir live bacteria and will produce 1 litre of kefir – within about 24 hours. You can make up to 4 subsequent ferments from your first litre that are still strong and provide billions of gut-friendly bacteria. Further batches will become weaker after each fermentation. Nourish Kefir Starter Cultures are very useful to take when travelling abroad to keep your tummy happy! You do not need any special equipment to prepare them- just a jug, spoon and some clingfilm to cover. The standard pack contains 6 x 3g sachets Making your own kefir with Nourish Kefir Starter Cultures You will need A sachet of Nourish Kefir Starter Cultures A 1 litre jug, A spoon (metal or wooden), Cling film 1 litre of fresh milk of your choice: e.g. cow’s, goats, soya, lacto-free Getting started 1. Empty the contents of the kefir sachet into a clean, dry jug. 2. Add 2 spoons of milk and mix into a smooth paste – make sure it’s lump free! 3. Slowly add the remaining milk, stirring continuously as you go to make sure there are no lumps. Stirring & fermentation time For 10 mins continue to stir gently – this important step blends the cultures and milk, ensuring a good fermentation. Cover with cling film and leave to ferment for around 24 hours at room temperature (22-24°C). DO NOT STIR DURING FERMENTATION TIME! End of fermentation When fermentation is complete your kefir will be set if using cow/soya/lacto milk. Other milks will not set but become slightly thicker and start to separate, such as goat/coconut milk. Transfer to the fridge to chill and ripen for 4-6 hours. Now it’s ready! Stir, pour & enjoy... Mixing cultures & milk It is best to avoid lumps by adding a very small amount of milk to the cultures to start. Mix it to a smooth paste, slowly adding more milk, stirring well all the time. If you have lumps – these are kefir bacteria and you will need to smooth them out so they can dissolve in the milk. Gentle, continuous stirring for 10 mins ensures even distribution of cultures in the milk, making a really good kefir. No need to use a mixer, by hand is best! Temperature The ideal fermentation temperature is 22-24°C (average room temp) for around 24 hours. On cold days the kefir may take longer to set. You can keep the jug in a warm place such as an airing cupboard overnight, or wrap a tea towel around it. On hot days it will ferment faster and could be ready after 18+ hours. Once it starts to separate it is ready! How you know it's ready Cow’s and soya milk kefir will form a curd; goats milk kefir will only thicken slightly. All types may start to separate (this is curds and whey) and form small bubbles as a sign of being ready! Storage Instructions At the end of fermentation, transfer your kefir batch to the fridge (store like fresh milk) and consume in 4-5 days. Keep remaining kefir starter culture sachets in the fridge. Please note – our kefir starter cultures are made from grains but will not turn into grains!

Review: buy this one! - Do not purchase any other I have tried several but this one gives you a perfect yogurty drink everytime with a superior taste. You have to make sure the milk (cows or goats) is room temperature and is in the warmest part of the house or it will take another 6-8 hours over the 24 hours it says it takes. Do not be afraid it will go off as it really doesnt during this time. I found the best taste was with full fat cows milk. I mixed mine with fruit and a sqirt of honey to make a smoothy. I did try as I am lactose intollerant to make it with rice milk but it didnt work or taste as nice. After a few week though I could not tolerate it anymore which was a shame as it tasted sooo nice.

## Questions & Answers

**Q: Can i make my next batch of kefir from the first prepared litre by removing some before straining and keeping in fridge before adding to next batch?**
A: Yes you can, I didn't strain mine.  Put 200ml of fermented kefir into a clean jug, slowly stir in 800ml of fresh milk to bring it up to a 1Litre.  You can make up to 4 ferments per sachet.  Hope this helps.

**Q: Will this product make the thicker yogurt like product or the drinking variety?**
A: The Nourish Kefir starter makes the drinkable version of kefir. It's fairly thick to start with then, once it's  chilled and stirred, it goes a bit  more runny. 
General information- the first batch made with a new starter, can take up to 30 hours to ferment, while subsequent fermentations take less than 20 hours.

Do not purchase any other I have tried several but this one gives you a perfect yogurty drink everytime with a superior taste. You have to make sure the milk (cows or goats) is room temperature and is in the warmest part of the house or it will take another 6-8 hours over the 24 hours it says it takes. Do not be afraid it will go off as it really doesnt during this time. I found the best taste was with full fat cows milk. I mixed mine with fruit and a sqirt of honey to make a smoothy. I did try as I am lactose intollerant to make it with rice milk but it didnt work or taste as nice. After a few week though I could not tolerate it anymore which was a shame as it tasted sooo nice.

Coconut kefir is an important part of my vegan diet, contributing to a healthy gut, especially after antibiotic treatment. These starter cultures are so much easier to to manage than kefir grains. I find that the culture can be reused a number of times satisfactorily. I like my kefir thick so I use one can of coconut milk rather than the 1l in the instructions. Timings vary, according to time of year and how much you heat your home at night.

I would recommend this for anyone taking antibiotics as it is a natural way to replace all the beneficial bacteria in the gut. It is pleasant tasting and easily forms part of your diet. It makes me feel good!
