Some with and some without.These lids and the system I’m using draws the air out of the jar, which causes the space between the particles to increase and… if your are like me, you fill your jars within 1.5 -2 inches from the top, when fermenting starts… liquid will overflow… thus the plates in the picture… and the large jar, note the height of the pepper mash after pumping. This overflowed on my counter.These hold down the particles and encourage the gas to work its way to the top. I say encourage, because I still get gas trapped below and that’s okay too.A friend saw these on my counter and gave me a hard time… sure, you could go find some very smooth stones and sanitize them, or be thrifty some other way, but these are glass, they are a breeze to clean and sanitize… there is little to no chance of contamination on the smooth surface if they are washed/cleaned even in the simplest way. So… almost a no brainer.Are they a must have? No….
