Review: Know what you're buying. Not a hone. - Quality product, but know what you are buying. This has a very coarse grit and is great for resurrecting severely neglected knives, a job that would take FOREVER to do with a honing steel. But in my opinion, this is a companion to a good steel, not a replacement for it. I start with this product to get the dings out of the blade, then finish up with a steel to get a razor-sharp edge.
Review: Love it - This sharpening steel is great. I use it almost daily to hone the edges of my knives when I cook. The one thing you do have to be careful of is this is a DIAMOND steel, as a result if your hit the blade wrongly on the steel you can actually re-cut the knives edge on this steel effectively dulling the blade. It's not a negative, as the steel does exactly what its supposed to its just simply something to note, and to make sure you use the steel correctly as to not damage your knives.

A: A steel like the #8861 is for honing your knife.  The #4483 Diamond Sharpening Steel actually takes off metal exposing new steel or "sharpens" the steel. Normally you would hone your knife every few uses.  You sharpen the knife every year or so depending on your use.

**Q: Which side of the steel are you supposed to have against the knife, the thin side or the longer, domed side?**
A: The longer, domed side.  Slide the knife from hilt to tip along one of the domed edges going up the domed side, then flip the knife and do the same thing coming down the domed side.  Do this several times and your knife will cut beautifully.

**Q: Is this a flat sharpening steel?**
A: It's neither flat nor round.  The sides are somewhat domed. Seems to work very well and should last a very long time.

**Q: Wusthof Extra Fine Ceramic Sharpening Steel; 4483 10 In. Diamond Sharpening Steel, which one is the true description?**
A: I believe the 4483 is the extra fine, even though I use it as the only steel to sharpen my knives.  It performs very well.

Wow! This is the best steel I have ever encountered. It may seem a bit pricey, but two passes with a dull knife and good to slice. I liked it so much, I bought two more. A knife fancier friend received one and loved how his knives "sing" when he used it and proceeded to shave some hair from his arm. I wouldn't recommend shaving with a knife, but he believes it will be the last steel he will ever need. Thank you
