My daughter was diagnosed with celiac and must be 100% gluten free. This was tragic for a baker like myself. I tried multiple gluten free flours and this one beats all else, plus it comes from the UK, so I love that the ingredients are processed with less chemicals. I have made a pumpkin roll, cupcakes, cake and biscuits with this flour. While most gluten free flours leave your baked goods dense and dry this flour is the right mix to all for your baked goods to be moist and fluffy. My pumpkin roll using this flour was so moist and soft. My only complaint is that I wish it came in a bigger bag!
