So, about five ounces vodka in smaller glass jar and I added 7 of the beans split down the middle. You really only need one bean per ounce of vodka, but I want a really rich Tahitian vanilla. Every few days I give the bottle a few shakes to activate more release of the bean into the solution. It has been only about 3 weeks and already the color is darkly vanilla brown, and the fragrance is nice. Typically takes a few months to mature, but I added a couple extra beans, so it is maturing faster. Should be perfect for Christmas baking. I also did an experiment using a fresh bottle of Nielsen Massey pure vanilla extract. I added one of the Tahitian vanilla beans, again split lengthwise down the middle, to the bottle of the Nielsen's...and it really improves the Nielsen's; within just a few weeks the fragrance is beautiful.
