The strength of this “wild” forest coffee is expressed in the organoleptic characteristics: a coffee that we like to call deep, with definitely a strong character, but also soft and with a velvety texture. It will be appreciated by personal choices without compromising taste. A coffee “is not for everyone. The cultivation doesn’t use fertilisers or pesticides. In the rainy season pruning of the branches of the trees which shade the coffee increases exposure to the sun and the ripening of the cherries. The harvest is by hand using selective picking techniques where only the ripest cherries are harvested. Harvesting takes place in November on non-rainy mornings. The cherries must be taken to the drying station within 8 hours. Process: the cherries are left to dry in the sun on mesh frames which are covered at night or when it rains. The cherries are turned every 30 minutes to avoid fermentation.
