I don't know why it took me so long to look for it at Amazon, but I'm almost too delighted for words to find it here and get it at such a good price. Even better, I get it as a "subscription" and save even more.You can't go wrong with this product. If you want the nutrition of whole wheat, but not the strong taste of the red stuff, you will love this flour. I use it mixed with a little unbleached white flour to make it rise a bit better, but it makes a wonderful, hearty loaf all by itself or mixed with other grains. My favorite is a 3/3/2 cup mix of Prairie Gold, unbleached bread flour and oatmeal. With a little honey, it is to die for. If you don't use the white flour, increase the amount of yeast you use and allow the dough to rise a bit longer. The most convenient part is the flour coming in 4 bags. Having one 40lb bag I'd worry about moisture getting into it. Having the 4 10lb bags is much more manageable. Oddly my order did come in 2 separate shipments. I got 3 bags at once, of course thought someone skimped on my order. I contacted the seller and within the day they explained my order was being filled from 2 locations and my second bag was on the way. It arrived a few days after the first 3.
