The ducks can be raised so that they are conditioned to eat one huge meal a day--because they are migratory, they are accustomed to eating beyond current needs to prepare for a long flight. The ducks actually get in line for their daily overfeeding. So I personally don't think that I am being inherently cruel by buying foie gras. I'd encourage anyone who thinks the practice is cruel to actually visit a foie gras farm, and to stop writing complaints if they refuse to actually look at the facts.OK, now on to the product. It arrived as promised, and is spectacular! In this package you are getting two pounds of foie gras, nicely portioned for you and cryopacked so that you can keep it, frozen, for a loooong time. I keep my freezer at zero, and two years is not out of line at all for cryopacked meat.The pieces in the package vary in size a little, but are nice-sized for a single portion. I seared them quickly then served each atop a four ounce filet mignon on a crouton, and used a truffle sauce for it. Classical Tournedos Rossini--and quite spectacular. I had a few left over and put them into the freezer.This is high quality product at a very attractive price. If you'd like to experience foie gras, this is a great way to do it.
