Sourced from microlots graded 80 and above, this single origin coffee is perfect for various brewing methods, ensuring a rich flavor profile with nutty chocolate and cherry notes, all while supporting ethical trade practices. ## Description Brazil Fazenda I.P. - Carmo de Minas This is a yellow bourbon variety from Fazenda IP in the Carmo de Minas region of Brazil. The coffee grows quite slowly here at 1300 meters which allows a selective picking method to maximise the harvest returns and quality. The farm uses a "zero harvest" approach to growing coffee whereby only half the estate is producing each year. The other half is rested by pruning heavily at the end of the growing season and leaving it to recover for a season and a half. This produces much higher yields. Our Roasting Ethos This is a very versatile coffee making it ideal as the starting point for espresso blends. It is also great on its own and you get a very strong aroma of brown sugar and nuts from the roasted beans and grounds. The temptation when roasting this coffee is to roast quite dark to develop the deep, chocolate notes but we actually prefer a slightly lighter roast to maintain a touch of the cherry fruitiness in the cup. ## Features - 100% Freshly Roasted Arabica Beans - We roast each individual coffee with a specific profile designed to accentuate particular flavour notes in order to ensure the best best cup of coffee regardless of the brew method. - 100% Speciality Grade Arabica Coffee - We only import and roast microlots graded 80 and above according to Speciality Coffee Association guidelines.
