Review: Impressive! - I was searching for the drip pan accessory for the SnS and stumbled across this thing. It was on sale and had a much bigger water reservoir so I pulled the trigger on it. Wow, this is legit! It seems like a solidly-built accessory that should last for a very long time. It holds an entire teapot of hot water for long cooks, and makes for an excellent heat sink, helping to hold temps steady. I believe this gadget helps two ways: (1) lots of humidity with that big water tray, and; (2) all airflow is directed up through the fire because it contours to the sides of the Weber Kettle; much more efficient than the square stainless steel drip/water pan I was using before. The first cook was some beef ribs and smoked shotgun shells. I probably filled the charcoal side 3/4 full of regular blue bag Kingsford and some chunks of oak and cherry. That amount of fuel lasted for five hours. Had a little trouble holding the temps down because there was so much fuel. The second cook was brats. I used a charcoal snake set-up and got much better control over temps. Third cook was baby back ribs. Incredible. I was able to dial-in low and slow extremely well. Snaking the charcoal up against the baffle is the way to go. The ambient temp never rose higher than 250 degrees throughout the entire cook (but I did have to add charcoal and start snaking back the other way after two hours or so). The big water pan does a great job of keeping temps from jumping around provided you don't get too big a fire in the first place. As for the food quality? Top notch. I have detected no difference in meat doneness closer or farther from the fire baffle. Everything came out moist and smoky and barky with no overdone parts. Excellent product and great value for the price. Stainless steel makes cleanup easy. Five stars.
