I gave this a try and it was delicious, though spicier than the usual restaurant fare. It comes in packets of paste compressed into a thin sheet, and there are detailed instructions about how to get it out of the packet, boiling water appropriately, when to add the paste, etc etc, etc. instead I cut open the packet on three sides so the sheet popped out cleanly, put it in a bowl of water with my protein and veggies, and popped it in the microwave. Amazingly, it worked! The soup itself was absolutely delicious, and makes a pretty big serving (instructions say two cups of water but I think used more than that). Very rich flavor. Try it with pieces of tomato--yeah, I know that's not a traditional ingredient, but a local Vietnamese restaurant serves it that way so I gave it a try. Great combination. I thought the delicious soup that costs $6 a bowl and contains 3 shrimps, onion & one imitation crab stick cut in half would be easy to make. NOPE, it's definitely not. After watching a few videos on the tube of you, I realized it was much more difficult to get that sinus clearing, nose dripping deliciousness. Then I discovered these envelopes of hope. I simply shell about a dozen shrimps, cut up my imitation crab meat and sauté a 1/2 onion in butter. I empty two packets of this glorious paste into 4 cups of water with my onions, bring to a boil, add shrimps, boil another minute, add the "crab" meat & turn off the fire. I splash a few shakes of fish sauce & 1/2 a lime juice and in the time it would take me to drive to town (and for a fraction of the price) I have a delicious Tom Yum soup at home. I'm not sure wearing PJs helps the flavor but it was a plus that I didn't have to dress for this meal. Enjoy!
