I love this series and own all of them.  The dishes are EPIC but one caveat...read the recipe twice before beginning.  Some are not paint by numbers and you need to figure it out a little bit but its not hard.

Some great recipes beautifully and simple to follow. Would prefer this series if there were less recipes involving offal and things that are not available or are too expensive for the average wannabe chef.

If you're aspiring to Rule your Kitchen, or to Rule a Kitchen and get Paid for it, it's a must have, right along side of Escoffier.This book, along with the rest of the Eurodelices series, is a must have for all aspiring Chefs out there, even those who have reached the top wouldn't harm them to get these books.
