Can be used dry - to add a strong instant smokeyness to your BBQ food or food smoker, or you can Soak the chips in water or wine to give a more gentle slower burning flavour to your BBQ food. try using them in a smoke box - V shaped boxes are best for Gas BBQs or you can use the flat bottom stainless steelk types too. tin foil works very well or simply throw a handful onto the hot coals of a charcoal bbq. Best used with a BBQ that has a lid, but equally as good to add some flavour to bbqs that have no lid, the flavour is less strong that way. All our chips are certified for use within restaurant cooking or commercial food smokers and are certified as such. great taste burns really good don't have to use to much I found leaving in water for an hour is just about for a great smoke and flavour well worth the price
