## Overview

Modernist Pantry's Methocel F50 is a 100% food-grade, non-GMO, vegan-certified hydroxypropyl methylcellulose powder that acts as a low-viscosity thickener and stabilizer. It reliably forms semi-firm gels at 62-68°C, making it essential for molecular gastronomy and modernist cooking applications. Certified kosher by the Orthodox Union, it offers professional chefs consistent, neutral-flavored texture control for hot foams, gels, and sauces.

## Description

Hydroxypropyl Methylcellulose F50 forms a semi firm gel at 62C (143F) - 68C (154F) degrees. Methocel F50 is "F" Grade Hydroxypropyl Methylcellulose. It has a low viscosity of 50 cP.

Review: Works as advertised - Great product, and works as advertised. Use good recipes though from reliable sources. There are a lot of bad recipes out there that are not tested and you can't blame a good product for a bad recipe
Review: Consistent Results For Professional-Level Textures - I have been experimenting with this Methocel F50 in my kitchen for the past two weeks to create stable hot foams and firmed-up vegetable purees. The thermal gelation properties are extremely reliable; it creates a clean, firm structure when heated that holds its shape perfectly on the plate. Unlike other thickeners I’ve tried, this powder has a neutral flavor profile that doesn't interfere with delicate ingredients like clarified broths or fruit essences. The fine particle size makes it very easy to hydrate in cold water without the clumps that usually plague molecular gastronomy powders. I was particularly impressed with the viscosity control it offers, allowing me to achieve a velvety mouthfeel in sauces that would otherwise be too thin. It performs exactly as expected for high-heat applications where standard starches or proteins would typically break down or weep. One minor drawback is that the packaging is a bit cumbersome, as the fine powder tends to puff out and coat the seal when you first open the bag. This makes it difficult to get a perfectly airtight closure without wiping the tracks down with a damp cloth first. However, the actual performance of the F50 is flawless for anyone looking to master high-temperature food styling.

## Questions & Answers

**Q: How do you prepare a solution of methylcellulose?**
A: To get something as thick as KY jelly, it's about 10 to 1 ratio (water to powder). Just add the stuff to clean water, stir, wait, stir some more and so forth until it finally all dissolves. It may take a few days. I don't know how to use it in cooking.

**Q: For making a solution, I tried stirring in cold water and it just clumped up. Is mixing in hot water the only quick solution (pun intended)?**
A: If it's clumping that means the powder is not sufficiently dispersed, as it does not require heat to hydrate. Try an immersion blender or other blender with high shear.

**Q: Is this hydroxyprophyphosphate starch (hydroxypropyl distarch phosphate (hdp)hdp)**
A: No.

**Q: At colder temp's = Methylcellulose becomes more wattery. if heated it become very thick. will it become wattery when it cools back down?**
A: F50 forms a reversible thermal gel. It has the ability to gel when heated and revert back to its original state when cooled. Thickness and wateriness will depend on usage ratios. F50 is a semi-soft gel with low viscosity so you will have to experiment to get the exact texture you are looking for.

### ⭐⭐⭐⭐⭐ Super Foam ingredient
*by M***E on 9 November 2024*

After getting the wrong kind of Methylcellulose which worked great for adding viscosity to beverages, I was happy that this is the critical ingredient for making Super Foam.
