## Description

Grown, harvested and packed at Tenuta Colombara. Processing Technique: Only the rice grains that pass the 20 processing and selection steps become Acquerello. One of them is the helix, still considered the best method for rice whitening: rice grains rub one against the other, avoiding any damage. Aging: Starch is stabilized, thus the rice grain will release less starch during cooking and will increase liquid absorption. Germ is the vital part of a rice grain. It contains most of the vitamins and micronutrients of rice. During whitening the germ separates from the rice grain, but thanks to a patented process we are able to restore it within the grain, enhancing its nutritional values. Lavorazione: Sono necessari 20 delicati passaggi per arrivare ad ottenere riso Acquerello. A partire dall’elica, ancora oggi considerata il miglior metodo per sbiancare il riso attraverso lo sfregamento dei chicchi. Invecchiamento: Il riso grezzo viene fatto invecchiare almeno un anno in silos a temperatura controllata inferiore ai 15. L'amido si stabilizza e durante la cottura si disperde meno, ogni singolo chicco aumenta la capacità di assorbimento dei condimenti. Sull’1% della nostra riserva abbiamo esteso l’invecchiamento fino a 7 anni, per ottenere un prodotto per le cucine più esigenti. La gemma è la parte vitale del riso, e contiene la maggioranza delle vitamine e dei microelementi. Review: Awesome results every time - This is the best long grain risotto rice I have ever used.. price is obviously high compared to what most are accustomed to but honestly no one is going to age a food product in Italy for 7 years without adding a decent amount to the end price, and with this I actually felt like I got what I paid for as the texture is awesome every time i make risotto with it,.. witch is kinda impressive since I'm not a perfect cook and this is a longer grain rice as opposed to Nano variety which is usually what i resort to using when I need to prepare a very tender risotto.

**Q: The 7-year aged rice is so much more expensive.  is it really worth the price?**
A: I shared your thoughts as well.  I am of North Italian heritage where risotto is prepared in a variety of marvellous ways.  This is an excellent risotto.  It is vacuum sealed in the can and ages one year.  I think that any risotto that is vacuum sealed, even in vacuum sealed plastic bags will be the best.  Rice that is only in cardboard boxes will not respond well to the long, reducing cooking process of traditional risotto.  All vacuum sealed Arborio is more expensive.  Bottom line: try it and evaluate the results!  I bought it again and I buy vacuum sealed risotto rices wherever I can find them.  I do not waste my money on dry risotto from a box.

This is the best long grain risotto rice I have ever used.. price is obviously high compared to what most are accustomed to but honestly no one is going to age a food product in Italy for 7 years without adding a decent amount to the end price, and with this I actually felt like I got what I paid for as the texture is awesome every time i make risotto with it,.. witch is kinda impressive since I'm not a perfect cook and this is a longer grain rice as opposed to Nano variety which is usually what i resort to using when I need to prepare a very tender risotto.

Just made a saffron risotto with this product last evening. Risotto is a staple dish in our house that I make at least once per week so I used this product instead of my usual rice. For me it is clearly a superior product then any other risotto I have ever used. I didn't tell my family that I was using a different rice and I asked them how it was and they indicated that it was good always. For me the texture and taste were clearly superior but those elements fell on deaf palates within my house. Being a fairly frugal individual, at $13 lb. versus the Beretta Aborio rice I get for around $2.25 lb. it is tough to swallow, pun intended. In conclusion, I will likely continue to purchase this product and save it for when we have foodie guests over that can better appreciate it or when I'm just cooking for myself and will continue to use the cheap stuff for the weekly family dinners.
