Das steht der Pizza beim Pizzabäcker in nichts nach! Wir haben einen Trick entwickelt, wie man die Pizza gut auf den Stein und wieder herunter bekommt: wir legen ein Backpapier unter den Pizzarohling, belegen sie, hieven sie mit einem Pizzaschieber auf den Stein. Nach ca. 2 Minuten ziehen wir die Pizza wieder mit dem Schieber heraus, ziehen das Backpapier hervor (da muss man allerdings zu zweit sein) und setzen sie zum Fertigbacken wieder in den Ofen. Die Pizzen dürfen nicht zu dick und zu feucht belegt werden, dann ist sie mittig nicht durchgebacken - aber das ist bei jedem Ofen so. Den Stein reinigen wir nach Abkühlung mit einem Schaber und evtl. mit Stahlwolle. Er bekommt ohnehin eine Patina. Die Verschlussmöglichkeit ist prima und auch nötig - sonst ginge Wärme verloren und man könnte sich verbrennen. Wir haben uns auch noch den passenden Wagen dazu gegönnt. Chauffe rapide, je conseille de laisser la porte fermée durant la cuisson car la température descend vite.
