I did this and it was 211 degrees. I feel this is the best indicator of safe canning temperature. This canner is so much easier than a hot water bath, used so much less water and heated up pretty quickly. I did make a dot on the indicator with a marker where the high temp was reached as the little red arrow does not stay in place. The company was very quick to respond when I contacted them.
