I’ve ruined several probes that way over the years, and it rapidly becomes annoying. To date, my favorite solution by far is one of the latest generation hand-held wireless Infrared Sensor Guns like the Etekcity Lasergrip 800, which cost me an extremely reasonable and affordable $25 usd in 2017. Anytime I heat a pot of oil for deep-frying, or use a saucier to reduce braising liquid into a thick sweet glaze, or if I use my griddles for things like making Lebanese mountain bread, homemade tortillas, quesadillas, pancakes, fermented dosa crepes, pressed sandwiches (paninis & tortas), burgers, steaks, bacon, blackened fish, eggs, et al., the Etekcity 800 is incredibly handy for rapidly spot-checking the temperature status of your griddle (so you can finesse it accordingly), and also finding any patterns of uneven heating that occur in your setup {TIP: CI is a poor thermal conductor, therefore the slower you heat it, the more evenly it heats}. Different foods like different temperatures too. For example, I like to work at around 500-550F when searing off freshly stretched mountain bread (see photo), which is very thin, and prone to overcooking if your griddle/plancha is too hot. Things like crepes and dosas are even more temperature sensitive, and a thermal gun is indispensable for helping you to stay in the ideal temp range, for significantly better results and less food waste. I usually use it at fairly close range (wheel bearings, tires, heating pads, etc) so haven't done any tests to determine long range accuracy but because of the physics of infrared I have no reason to believe it would be any less accurate at longer range. However it is rated at 12:1 spot ratio which means at twelve feet it would nominally be measuring the temperature of a one-foot circle and the farther removed you are the large the circle you would be averaging. One reason I chose this model was because its 12:1 rating was tighter than many other brands which were rated at 10:1 and 8:1. I have also used it to detect cold spots in my walls while standing back 8-12 feet and it has done this reliably. **Q: Hi i would like to use this device to measure my cast iron coal stove surface temperature. The range will be 400-700 degrees** A: I use this device for my wood burning stove that's in my outdoor sauna. I aim it at the side of the burning chamber and it works great. I know when it's 600F or higher, that there is a good burn inside. When the temp drops to 500F or lower, I know it's time to add wood! **Q: I am getting a LO reading what does this mean?** A: I would imagine that means your battery us low. I would change the battery and see if that addresses the issue. **Q: Could I use it to measure oven temperature. through the oven glass and check for variation? i.e. front, back, middle and check for temp/variation?** A: Rather than tell you "I don't know", I will tell you what I think the answer is. I think that because the glass gets hot it will skew the readings. You may get just the temp of the glass and no internal temp or an average of the two. Do you know this instrument only reads radiated heat?
