I'm sure they are at least equivalent to the other dental tools your seeing on Amazon. For a carbon steel with less than 1.7% carbon at temperatures below about 1400 degrees F, the steel exists as ferrite. Ferrite has a crystalline structure called body centered cubic. At temperatures above 1400 degrees F and below about 2600 degrees F the structure of the steel changes to something called Austenite. Austenite is a face centered cubic structure, and is a more efficient packing arrangement than is Ferrite. Ferrite is magnetic. Austenite is NOT magnetic. If plain carbon steel is alloyed with nickel and/or chromium the temperatures at which these regions of these different crystalline structures exist changes. With enough chrome and/or nickel alloy, the Austenitic region of the steel is lowered so that it exists at ambient temperatures (rather than up above the 1400 degrees F range of plain carbon steel). Along with the nickel and chrome, that more efficient packing arrangement of the Austenitic region creates what is called stainless steel. It makes the steel more resistant to staining. But even if the amount of nickel and/or chrome isn't enough to make the steel Austenitic, just the chrome and nickel themselves make the steel more resistant to staining. So generally speaking both are called stainless steels. I myself refer to the Austenitic steels as stainless steels. But I refer to the non-Austenitic stainless steels (like the steel used for these tools - since they are magnetic then they aren't Austenitic), I refer to them as stain resistant steels. I suspect that the stain resistance steels take a better edge and that likely is at least a reason why they're used instead of Austenitic steels. As a side note, stainless steel fire arms, like S&W and Ruger revolvers, use magnetic stainless steels as well ... I think the same is true for stainless razor blades too.
