I set the little red arrow aside till I figure this out. This gauge has letters rather than temps which is okay as you just need to set the gauge and be sure to read the manual for explanation. I just canned a batch of chutney and it was so much easier. I liked that I did not have to lug the full canning pot to the sink to empty. I would have to wait till it cooled down (sometimes Overnight) to empty. Great steamer too. I had a huge Napa cabbage that I wanted to make stuffed cabbage. I cut off the bottom of the cabbage and removed the leaves and placed in the steamer and will assembly the cabbage rolls when the cabbage cools. I look forward to steaming corn on cob or dumplings or whole cauliflower or broccoli. I don’t have to break in little pieces to fit into our small stove top steamer. Game changers.
