Product description Yacon is a perennial plant in Andean region, it is cultivated and grown for the crisp tuberous root which tastes like a cross between apple and watermelon. The sweet taste of Yacon root comes from inulin which is an indigestible sugar, meaning that yacon roots contain fewer calories than other sweet substances. Yacon will not dissolve completely in water so can't be used as a direct sugar substitute but will add sweetness to thicker mixtures such as shakes, smoothies and desserts.
