I also have a great set of quality Japanese sharpening stones. I found that they took so long to use that I tended to sharpen knives infrequently. The tormek is SO FAST AND EASY. Nothing to stop you from just turning it on and giving a knife a quick touch up. Even our cheap beater knives are like razors now. Unbelievable. And so versatile with regard to knife shape, angle, size, length, etc. Best possible choice. My sharpening stones are now expensive paper weights. We used to take our knives in for service at a specialist shop / knife maker who sharpened them on progressive belt sanders. This honestly works even better and over time will cost less. We used to pay $1/inch. Well, well worth it and will pay for itself in no time.
