The bag I got was full of broken rice, so it was not very nice for anything but gruel and the flavor and texture were not what you would expect. **Q: Can you make risotto with this ?** A: No, I wouldn't & I am a chef. I find this rice very sticky & clumpy after it's been made. Use Aborio rice for risotto. Also, I have been rinsing this raw rice 1st until the water runs clear of all the milky starchy water & it cooks up better. This would be the perfect rice for rice pudding though. **Q: is this good for red beans?** A: This rice will be wonderful with red beans. Great combo! **Q: What is the arsenic content in this rice?** A: That is a great question and I wish I had the answer. I don't have the packaging and information anymore but I'm going to do some research and try to find out.
