Mid or large in your set probably most suitable. I have a set of copper pans that are too shallow as the bowl should be clear of the water. I am very pleased with this item. **Q: What quantity does this item hold? I need 1.5 - 2 liters.** A: Have just measured mine: the lower bowl holds half a litre and the wider part holds anothe litre with about 3 cm before the very top so - with stirring space! - you might get a litre and a half in but 2 litres would be pushing it I think! It is a good quality item though and I have used it a lot - Christmas custard today! **Q: Can I melt wax in it** A: It's designed to be used over boiling water, so potentially heats up to 100 Celsius. Maybe best for a larger amount tho ### ⭐⭐⭐⭐⭐ Bigger than expected *by M***N on 25 October 2018* Very sturdy and bigger than expected, so large saucepan required, it has a rounded bottom which at first thought it might be a problem, but I'm able to stand it on the counter without all the chocolate coming out (use t. towel to lay it on).Delivery and packaging very good and arrived quickly.I put 450g of chocolate in and only fills a quarter of the pan. The top of pan is wide enough to bang chocolate back in although I get messy.
