You can free use SousVideArt coker till 194 F. But the main idea this method is to cook meals at low temperature. According to the famous cooking book  "Sous Vide for Everybody", the best temperature for poultry is 150F, for tender steaks is 126-134F. 
So, you can choose any temperature till 194 F.

A: The diameter of the part is 3,1" like many others sous vide immersion cookers.
