**Q: Is this pectin NH, i.e. Reversible and can be heated again?**
A: Yes it can be re-heated and dosage increased.

**Q: Is this actually food grade? It doesn't say explicitly and agar is obviously also sold for labs (and then it's not food grade).**
A: Yes it's food grade. The Special Ingredients company that sell this are suppliers of food ingredients and flavourings world wide and supply restaurants and catering companies.  Everything they sell is for consuming and is food grade.

**Q: how much do i add to make strawberry jam?**
A: I use 10 grams per 500 grams strawberries (hulled weight), 700 grams caster sugar, 180 ml water. Scale up or down as appropriate. I normally make many kilos of strawberry jam/preserves and for above quantities use about 50ml redcurrant juice (high in pectin) extracted from my small crop to add to the hulled strawberries. You can also experiment with preserving and jam sugars.  If you grow your own strawberries it is up to you how you use them. I don't grow them any more but know when to go to the market to get them when remaining shelf life is short... Wonderful bargains to be had but they have to be jammed in 24 hours. Be prepared for trial and error...
