These are very superior anchovies but you have to learn how to use them. They are large and packed in thick  sea salt crystals. They are quite different from the standard anchovies in the UK: small fillets in olive oil. Once you get used to Delfino anchovies they are excellent.

Se abitavo al mare potevo rimettere le alici in acqua ed avrebbero nuotato tanto erano ancora fresche! Ma le alici salate non devono sottostare ad un periododi maturazione?Le alici sono state messe nel vasetto alla rinfusa quando è noto che devono essere stratificate alternando coda-testa con pancia verso l'alto ed incrociando le varie stratificazioni. La quantità di sale è eccessiva . Il dubbio che sorge:  il sale si compra a circa 1€kg e poi si quota, sul prodotto a più di 20€
