The colour is quite bold and actually turned the biscotti dough a dark bluish purple. Yes, the colour of the extracts is quite bold, so if what you bake needs to be un-tinted, these may not be a good option for you. I will list each one and state yes or no as to whether it has alcohol in it. ALMOND - no. ORANGE - no. BUTTER VANILLA - no. LEMON - no. RASPBERRY - no. What they have in them besides natural flavor is propylene glycol, and also soybean oil in the case of the Butter Vanilla. As for their oils (not emulsions), those are pure natural oil with nothing else in them. You didn't ask about the oils, but I still thought I'd comment, just in case.
