I slice it finely and eat it plain with wine, but I can imagine it'd be an excellent seasoning as well. I will say it does NOT pair well with all drinks, but that's not the bottarga's fault. For the price it's totally fine (after all, I want to eat it, not look at it, and as seasoning you wouldn't notice) but if I were having company and wanted to serve bottarga straight I might get a more pink brand. **Q: Is the color of the bottarga supposed to be dark brown and almost black?  I received my order of the 5.6oz piece but I am hesitant to try it.**
A: Mine was also very dark and it was fine. The photo doesn’t really reflect the actual color of the product since there are natural variations.

**Q: Why is this bottarga half the price of others?**
A: We can guarantee a lower price than our competitors because we do not have intermediaries or other sellers. We are both producers and sellers. In addition, the product is recently on Amazon and we started a promotional campaign to publicize the launch.

I love spaghetti alla bottarga since discovering it in Sardinia. Since then, I’ve learned how to make it and always have bottarga on hand for when the urge hits. I’ve ordered numerous brands of bottarga through Amazon and have liked them all but this one is slightly different. When I received it (quickly and beautifully packaged), I noticed it was darker than what I’ve seen. I wrote to the company and was assured it was fine to eat. Tonight, I tested it out, making my usual spaghetti bottarga. It was delicious. The Mr. Moris Bottarga has a subtler, smoother taste than many I’ve tasted. One of the ways to eat bottarga is thinly sliced (with a glass of champagne if the gods are with you) but that idea never appealed to me until I tasted this one. I love this stuff. It's basically caviar jerky - very delicious and beautifully packaged. I slice it finely and eat it plain with wine, but I can imagine it'd be an excellent seasoning as well.
