Only the PREMIUM is true oyster sauce, made with oysters. The others are marked "oyster flavor"... no real oyster. Just as in "cheese product" it is not true cheese, or with "vanilla flavor" there is no true vanilla. Hence the usual cost differences. I have not tried the flavored sauces so don't know if I would notice. I recall watching America's Test Kitchen where they noted that vanilla favoring was better tasting and better for most baking than the much more expensive real vanillas. **Q: That's this sauce contains sugar?
