I makes superb bread used at 1 level tsp per 500g of flour. Yeast tends to develop the same flavours as the material it was cultured with. (This is well known in the bear brewing industry). Thus this will bake breads with superior flavours to other modern non organic yeasts including fresh yeast. Fresh yeasty doesn't confer any better flavours than a dried yeast BTW. Yeast becomes dormant and really does not care whether it is soggy or dried when it re-activates. I made a mistake and took it out and left it in the cupboard, it was OK for ages but near the end of the date shown, it was not rising as well. I think it might even go past the date if stored in the fridge. **Q: Can this be used to make bread?** A: Yes I use it with a bread machine, it great! once opened put in an air type container and keep in the fridge or it can loose its ability to rise as well. **Q: should this be dissolved in water first or not?** A: I use it for bread making , I either add it straight if the recipe says to or dissolve it in water if the recipe says to.
