## Description

Product Description "We may be new to you, but we’ve been around a while! With a milling legacy spanning eight generations, Matthews Cotswold Flour is one of the UK’s oldest family-run flour mills. Trading grain and milling flour in the heart of the Cotswolds since the 1800s, we’re proud to offer premium quality Organic and Stoneground Wholegrain flour, using grain from local farmers and traditional milling techniques. We supply predominately small, professional, artisan bakers all over the UK including 3 out of the last BIA bakers of the year. We mill using traditional stoneground methods and roller for premium bakers’ white flours. We source and blend our 8 types of grain from our local Cotswold Grain Partnership to create award winning bread, wholegrain, culinary, pastry and speciality flour blends. The Matthews Cotswold Flour story began when the original FWP (Frederick) Matthews built a mill on the river Evenlode in 1912. You’ll find us working here to this day, overlooking the picturesque Cotswold village of Shipton-Under-Wychwood. It’s where we mill, pack and ship every order to your door. Today, the company is led by father and son team Paul and Bertie Matthews – FWP Matthews’ great, great-grandsons. he Matthews Cotswold Flour story began when the original FWP (Frederick) Matthews built a mill on the river Evenlode in 1912. Review: Lovely, high quality flour. - It's nice to know that the flour is grown and milled by the same family and has a limited amount of additives in it. You can taste and see the difference. Lovely flour, reliable quality that retains it's rising agent for ages. I will buy it again again as my quality of bakes has improved with their flours-I got one (spelt), went back for 4 other types, all equally good. It's great to know it's unlikely you'll run out any time soon. As a side note one of their labels is now forming part of a school display about "farm to fork" to do with food traceability. Child was the only one in their class that was able to say that they knew who made their food and where their food product. "This man's family grew and ground it up at their house and sells it to mummy to make pancakes with".
Review: Good quality. - I was a bit apprehensive ordering flour on line but I was delighted when I received my order. The quality was very good, I can’t fault it and I would consider ordering again. Stupidly I didn’t order plain flour at the same time, mainly because I wasn’t sure of the quality but after receiving my order and seeing how good it was, I tried to order plain flour but it was sold out. I think it was well worth the money.

- DID YOU KNOW. Self-raising flour or Self-Rising flour in the USA is a mix of all-purpose flour and raising agent. In the USA Self-Rising flour contains salt but generally not in the UK. That Self Raising flour was invented by Henry Jones a baker in Bristol in 1845. Being an innovative baker, he created a way for bakers on board Royal Navy ships to create better baked goods. A year later, Henry was appointed purveyor of patent flour and biscuits to Queen Victoria and in 1849 he gained patent in the USA. Well done Henry our Cotswold Self Raising flour is dedicated to you.
