The screw in the middle allows you to tighten them as they do get a bit looser after a few minutes. When this happens the front few centimetres of the tongs don't really grip at all, although you may not notice at first until you look and see that they are slightly apart towards the front if the screw gets a bit looser. It could be designed better so this doesn't happen. I only used it today for some minutes so it won't have loosened that much but enough to have this effect.
