Sediment is in unfiltered olives oils. All Greek extra virgin olive oil is raw because it is cold-pressed. For cooking, only filtered olive oil will give good results, olive sediment may overcook and the moisture may cause splattering or affect your recipe. Filtered olive oil is shelf stable for 2 years, but unfiltered olive oil is good for less than year and is often refrigerated when open as the olive fruit sediments will start to ferment, affecting taste and purity. Olio Nuevo has the most sediment and moisture, so it is only good for 4 months. Greek olive oils are filtered shortly after picking, preserving more olive flavor and a butteriness.
