The shorter knife is a bird beak knife. I hadn’t even heard of that term until I ordered these. It is nice for paring vegetables. I used it to peel a few potatoes and a cucumber. It is different than what I am used to, but it is pretty sharp. My old paring knife is an Old Hickory knife that I have had for over 40 years. My family members know not to touch it. It is steel and will rust, if left wet. This Martha Stewart Birds Beak knife is made of China stainless steel. That is stamped on the side of each of these knives near the handle. The tomato knife slices through tomatoes, easily. I canned tomatoes, today, and use this knife to dice each of the tomatoes for salsa. I used the forked end o remove the stems and it was easier than a regular serrated knife. I also used it to cut the ends off of some ears of corn and then cut the corn off the cob. These knives are heavyweight. They each have three rivets in the handles. These knives are supposed to be hand washed, only, but today I ran them through the dishwasher and then forgot they were in it, for several hours. They showed no signs of rusting and the handle looked the same as before being washed. I won’t dish wash them on a regular basis, because I want them to have the best care for a long life. These Martha Stewart feel relatively heavy. They cut fine, and I like the feel of the handles. They aren't amazing, but they're well worth the price and have been a good addition to my set.
