I would measure the nipple on the cap and buy tubing accordingly. **Q: Will these caps hold a vacuum? Want to use it for degassing.** A: The fermenting lids I have are not the same as these. Mine would not hold a vacuum. **Q: how do you syphon through the lid?** A: There are two holes in the lid one is for a air lock the other is for a racking cane or tube for siphoning. Both holes have caps to plug them. **Q: Would this work for long term wine storage? (Decades)** A: I am not sure if this would work for decades. I have used it to condition beer after primary fermentation but for only 30 days. As long as you can keep oxygen out there shouldn’t be an issue. Not so easy to get the airlock out, but I prefer that over the airlock coming out on its own. The extra nubs for holding caps is a fantastic feature, and you can take the cap off the opening your airlock isn't in to more easily get the airlock out without chancing sucking some of the water in.
