## Description

Our flour is milled to order just for you. We use our amazing wheat berries and our stone mill to make amazing fresh whole wheat flour. We offer two different kinds of whole wheat flour, multi-purpose (soft white wheat flour) and white bread flour (hard white wheat flour) as well as whole wheat flour (hard red winter wheat flour) and whole wheat bread flour (hard red spring wheat flour). Our flour is unbleached, un-bromated, non-irritated with no additives. Flour is typically a blend of red and white wheat as well as hard and soft wheat that ranges in protein from 8-13% and usually only utilizes the endo of the wheat kernel. We are able to provide a whole wheat flour that has the same qualities as all-purpose but gives you the nutrients from every part of the whole grain. Our soft white wheat berries have a protein of 11% which creates one of the best multi-purpose or all-purpose flours. Our hard white wheat berries have a protein content of 13% which produces an amazing bread flour. Our white wheat flour is unbleached and is free if of potassium bromate.

Review: This is true Gold-Star Wheat Flour - We were previously using Einkorn whole wheat flour for making bread in our new bread machine. Though the resulting bread had excellent taste, I kept getting holes and other artifacts, making it difficult to make sandwiches, etc. We live pretty close to the Palouse hills in Eastern WA, so decided to try this wheat flour over other offers. The results have been wonderful in both taste and texture. The resulting bread has about a 5:1 carb to fiber ratio, which is spot on. It has a slightly sweet taste—just slightly, not at all “sweet” in desert terms (whole wheat’s tend to be slightly bitter).

As such, I’ve tested multiple glyphosate free, whole-wheat flours, and this is one of my favorites. I find that it works best in a lower hydration dough, and it makes an excellent sandwich bread following the recipe from Sally’s Baking Addiction. When used to make a no-knead artisan style bread, I typically mix it with a sprouted spelt or finer milled flour for better structure. Taste is superb! My kids hate when I make bread that isn’t “brown” from being made with other flours. It is nutty, has a great texture and is worth the current price.

**Q: Is this a good substitute graham flour? i have always used bob's red mill graham flour for my lefse but they no longer grind it.**
A: No you can’t use this as graham flour is totally different simply because it does not rise. This is whole wheat bread flour and acts completely different in recipes

**Q: Any recipe's for making bread with the Whole Wheat Flour?**
A: This recipe assumes you have the means to grind your wheat into flour, and that you have a standing mixer capable of kneading the dough. This is a two-day process.
The day before: Grind wheat berries to make about 6 cups of flour. In a large bowl, combine 1 1/2 cups lukewarm water, 1/2 tsp honey, 1/4 cup potato flakes, 1 tsp yeast and 3 1/2 cups flour. Mix ingredients thoroughly, knead by hand for two minutes, then place in gallon sized ziplock bag and refrigerate for 24 hours.  

In the same bowl. combine 1 1/2 cups yogurt, 1 6 oz can of pineapple juice, 1 tsp salt and 1 tsp yeast. Beat in 2 1/2 cups flour, beat mixture well, cover with either plastic wrap or a towel, and let stand at room temperature for 24 hours.

The next day:  Tear the refrigerated dough into pieces, wrap each in the soaker and drop into the large bowl of a standing mixer. Melt and cool 1/2 cup coconut oil, add 1/3 cup honey, and pour into mixer bowl. Begin mixing, and add 2 tsp salt and  4 1/2 teaspoons yeast. Beat on medium low speed, adding small amounts of flour or water as needed. When dough leaves the side of the bowl and is no longer very sticky, turn out on a floured board, cover loosely, and rest for ten minutes. Knead bread by hand until smooth and satiny.

Place dough in well-greased bowl, cover and allow to rise until double in size. Punch down, turn dough over and let it rise again. Divide dough into thirds , shape into loaves and place in loaf pans. When dough is about an inch above the pan, carefully slash the bread diagonally across the top. Bake at 350 degrees for 50 minutes. Remove from pans and cool on a rack. Makes three loaves.

I love this flour's taste, smell, and consistency! In my bread machine I make bread weekly, and I have had great results with my flour mixture that includes a large portion of this flour. I use part Dark Rye flour, small bit of unbleached all-purpose flour (to help it rise better), and then this hard red spring flour. The bread produced is by far the best I have baked and it's taste is wonderful! I'll stay with this one for sure! Thanks to the Mader family for the hard work that I'm sure it takes to raise this wheat. Take my word for it: you have a winner here!
