Tete de Moine is a 1.8-pound semi-hard Swiss cheese, aged 12+ months, known for its strong aroma and nutty, tangy flavor. ## Description

Tete de Moine means 'monk's head'. This Swiss gourmet cheese was originally invented by the monks of Belleray Abbey in the Bernese Jura, and the brothers taught the local farmers how to make it. Unlike most other mountain gourmet cheeses which tend to be very large, it is made in small drums. The rind may be smooth and slightly greasy, or rough and brown in color. The paste is firm and creamy to straw-yellow in color, darkening as it ages. There may be small holes or horizontal fissures in the paste. Older Tete de Moine cheeses smell strongly of roasted nuts with wine-like aromas. The flavor is sweet and tangy, with musty wood mold and nuts. Tetee de Moine can be sliced vertically but to get the frilly curls of cheese traditionally served in Switzerland you will need to use a girolle. The curls are achieved by turning the handle of this special knife on a stand and shaving the cheese across the top and a little way down the sides.

Review: Fantastic Cheese! - I bought this and then stuck it in the back of my refrigerator for several months. I finally remembered I had bought it and was waiting for an occasion to pull it out and use it on my new Girolle machine. Did that last night for a dinner party with my whole family - adult married kids etc. It was fantastic. I worked beautifully on the girolle machine, allowing use to shave off perfect ruffled shavings. This made for a fun, aesthetically pleasing and interactive activity during cocktail hour. And the taste was superb. The rind was pink which means it had been washed in B Linens bacteria wash. It was also just a little stinky in a very good way - also from the B Linens. The paste of the cheese had such depth in flavor with all kinds of yummy flavor molecules coming through on the palate that must have come from the great grass the cows had eaten. Would buy again! Especially nice that it keeps a really long time in the refrigerator.

Cutting this cheese into "hunks" or "wedges" makes it too difficult to savor. If no "Giroulle" is available. shave this cheese as thin as you can!!

A: The curls are paper thin and don’t weigh much. I would estimate 200 to 250 curls per 1.8 lbs. This cheese is very flavorful and a little goes a long way.

Got a full refund on this CRAP. When it was received it was ( wet) an it tasted just like Dirt !!! I eat dirt when I was about 3 , it came from a third party in Florida, save your $ , wanted it for Thanksgiving dinner snacks no one cloud eat it Nasty!!!! An I have two chefs college trained in the family, upon refund call I was informed to Discard the funky cheese return was not needed..... Nasty
