Also known as NaOH and Caustic Soda. It is a minimum 99% pure inorganic chemical. It is a solid and highly caustic white metal base and alkaline salt. Sodium hydroxide is soluble in water, ethanol and methanol. This alkaline is deliquescent and easily absorbs moisture and carbon dioxide in the air. In soap making: Lye is mixed with water to create a lye solution. Lie solution, when mixed with fats and oils, will cause a chemical reaction called saponification (fantasy for soap). The result of the saponification is a beautiful handmade soap. In food preparation: Food uses of sodium hydroxide include washing or chemical peeling of fruits and vegetables, chocolate and cocoa processing, caramel dyes production, poultry scald, soft drink processing and thickening of ice cream. I can still seen the lye stains after applying oil , is it ok to use?** A: Lye darkens wood. There's not necessarily any significant amount of lye left in your cutting board. Acids bleach wood and even vinegar is pretty good at lightening wood darkened with lye or soda or some kinds of soap or whatever. Try pouring a thin film of vinegar on your cutting board and quickly scraping it off or scouring with a stainless steel scrubbing sponge. (If the vinegar foams up there is still some alkali left in the wood, but the vinegar will neutralize it.) Vinegar also disinfects to some extent. Peroxide might help too. Pour a little on and scrape it off (Amazon Basics counter scraper is quite good). Peroxide foams when it hits protein (like meat juice) and is also a great disinfectant for wood.
