I always keep olive oil on hand because of its nutritional benefits, but I also like to have it on hand because I love how it enhances the taste of our food. I have been open to trying different brands throughout the years, and what I have noticed is the difference between a good/bad olive oil. This olive oil is FANTASTIC! It is on the pricier side, but I am a firm believer in "you get what you pay for." I also find that the cheaper olive oil brands are really heavy and oily, and they smell kind of funky!! La Laguna de Fuente de Piedra has a delicious pungent flavor which means it is full of the antioxidants we need. It also has that premium bitter taste I have come to know and love from a good olive oil. After it arrived, I decided to make an Italian meal so I could give it a whirl! Everything that we added this oil to tasted delish! I love making homemade dipping sauces and salad dressings because my family loves bread and salad, and many times when I blend the oils with other ingredients, it causes the oil to lose its taste. Not only was this oil still delicious after blending, it also tasted great straight out of the can. A couple days later I made a homemade avocado salad dressing. My goodness, it tasted 10 times better than it usually does when I use other brands of olive oil. Starts off with a peppery kick which mellows but the fresh, rich fruitiness lingers leaving a pleasant lasting flavor, beautifully coating your palate. Being on the Ketogenic diet for seizure control I have to have nearly 200 grams of healthy fats a day which can be challenging so whenever my numbers are low I go to olive oil. Most of the time I use it on my salads and drizzle over my meals including grilled vegetables and fish. I have tried many brands and I am very happy to have discovered this one!

**Q: On viduena olives evoo 2.5l : (1) what are the harvest and sell by dates you are shipping now (2/2020)? (2) what is the acidity (%)?**
A: My can was Early 2018/2019 harvest And use by 2/28/2021. Just finished it today. It’s the only one I buy as it is so yummy and consistent

**Q: is it filtered? is there info on phenolic content?**
A: In regards to filtration. Please see the text I copied below. I apologize if this seems long winded. Olive oil filtration is a complicated and misleading topic and I'd like to take the opportunity to provide some information:

“Unfiltered Olive Oil” is used on packaging as a positive feature. Lots of olive oil enthusiasts seek unfiltered oil under the belief that it will have more/better flavor. I want share some details about filtration and why it’s actually necessary for producing quality olive oil.

 Here is a quote from Claudio Peri's "Extra Virgin Olive Oil Handbook":

"Filtration is necessary

Some producers maintain that extra-virgin olive oils do not need filtration but also that filtration is detrimental to oil quality. This point of view should be considered as erroneous and probably the result of improper implementation of this operation." (Peri 155)

At TSS we find that filtered olive oil have a cleaner, less greasy, and more expressive flavor. The filtration removes water, enzymes, and detrimental suspended particles. This makes the olive oil taste fresher for a longer time and raises the smoke point.

Filtration is expensive for producers to perform. It decreases the yield. The filter medium is expensive. It ads an additional time consuming step after centrifugation. You can see the thickness of the filter below. The oil travels through more than 50 of these at a low temperature. This is why a lot of unfiltered olive oil actually a cheaper product.

**Q: Are pesticides used on the farm?**
A: No. Also, each batch is tested by the ministry of agriculture. Results and batch number are printed on the can. The original document are in the product images. If any trace of pesticide is detected in the chemical analysis the oil would be rejected. Thank you for asking this question. I hope that you ask it about every olive oil you are thinking of purchasing.

**Q: can olive oil be stored in stainless steel container**
A: Stainless steel is non-reactive and good for storing/dispensing olive oil. The best container for any longer term storage is the container that the producer used when bottling. This is because every time olive oil is transferred or exposed to air it degrades. I recommend storing in the original container then using stainless or glass as a dispenser. 

The other issue with buying olive oil that has been transferred to another container before being sold is that you can no longer know for sure what olive oil you are buying. This is why we always encourage buying olive oil in the original packaging from the producer.

This is a great olive oil. The first time I poured some out of the can I could smell the exceptional quality of the oil. I've been buying what I thought was quality but after tasting this small batch oil I now know better. Expensive for sure, but I've paid more for a bottle of wine that didn't make it to the next day. I'm never going back to the cheap and probably not even olive oil supermarket offerings. If the family in Spain is reading these reviews, offer an English language selection on your webpage, you have other products I'd like to try but I don't read Spanish.
