I always had fresh Christopher Ranch garlic. I moved back to Austin in '89 and missed having Gilroy Garlic. I would get deliveries from friends and family but lately I had to rely on Florida garlic. When I saw these on-line I had to order and the quality is how I remember it fresh. The tags state picked Jan 2025 and they always let it dry a bit before selling. Worth the price. Each bag has 21 and 22 large bulbs 15 and 16 we're like the ones pictured, 5 were without the outer skin and 1 in each bag were starting to sprout. You can eat sprouting garlic and maybe higher in antioxidants. I did not see any mold and the smell was fresh garlic. I plan to use them fresh, remove the skins (which I save for garlic powder) and vacuum seal / freeze some, let some dry out to make garlic powder, dehydrate some and plant some in containers for future crop as I live in an apartment. I would love to make garlic ice cream as that was a favorite at the garlic festival. I make potato skin soup and usually use two cloves of other garlic sold here in Austin and decided to put one clove of Gilroy Garic and found it to be stronger.
