It functions as my stainless steel pan, just lower walls and wider. I used it to cook dosas and this was the first time I got all of my dosas to release (8 dosas). Nothing burned because nothing stuck that wouldn't release with the metal spatula. I didn't have to soak it for more than a minute and everything scrubbed right off.
