A: I use purple yam powder to make a purple, (as opposed to red), velvet cake.  The powder adds texture but no distinguishable taste.  It has the texture of finely whipped potatoes when liquefied by adding water and cooking.

A: This product is powder, and, therefore NOT measured in fluid ounces. In grams the product weighs 115g which yields 4 ounces of weight NOT volume Only 8 FLUID OUNCES OF VOLUME (236.5ML) = 1CUP So, it only WEIGHS 4.06 ounces, or ¼-pound. I'd compare it to either 4oz of Ground pepper or any other finely ground seasoning. 16 Tablespoons of fine powder would be slightly more than ½Cup (½C = 15Tbsp +2¼ tsp). This should be considerably less volume. Even the package isn't large enough to hold 16Tbsp.
