I doubt the extra two springs above the top plate make any difference in the efficiency of the press and probably make it a little more complicated to get the tension you want on the block of tofu. **Q: What is the difference between the one with 2 springs and this one with 4 springs?** A: The center springs simply hold the plates apart so it's easier to set the tofu block between them. The function of the top springs in the 4 spring model is to apply an 'automatic' pressure on the tofu. It'll be a lot easier to apply too much force and crush the tofu without the extra springs, Apparantly with the two spring model it's recommended that you tighten the plates as the tofu loses its water. Probably a couple times during process, the springs on top do this for you. I bought the 4 spring model and really dig it. **Q: Could this be used when making paneer type cheese?** A: I'm not an expert in cheese making, but I don't think it's going to work. I think the curds will spread apart, they won't hold together since the press is totally open. Normally for cheeses like paneer you should use a mold with a kind of strainer in the bottom and press from the top. **Q: What is the purpose of the springs? How does this compare to spring-less versions?** A: The springs between the plates are to hold the two plates apart for convenience. Without the springs the two plates just flop around and it is difficult to load the tofu since you have to hold the top plate up with one hand to insert the tofu between the two plates. Without the springs both plates fall together on the bottom plate. You notice that all photos of the spring-less model have a tofu block between the plates to hold the plates apart since the plates do not stay open without the tofu. With the springs it is much easier to clean since the plates are held apart.
